1 C coconut flour
1/2 C ground flax seed
1 1/2 C blended sweet potato (baked the day before)
1/4 C maple syrup
8 Table spoons Coconut oil
1 1/2 tsp baking soda
Bake at 350 in two bread loaf trays for ~30 min (check with toothpick or fork to see when it’s done)
In a food processor, beat desired amount of strawberries (I used about 20) into a pulp.
In a double boiler (I create my own with a larger pot boiling water, and a smaller pot sitting on top of it with the reduction in it), put in the strawberry pulp, ¼ cup coconut butter, ¼ of a stick of raw butter, and drizzle in some maple syrup. Reduce down to a pink sauce. Soooo tasty!
Once the loaf and glaze is done and cooled down, spread the glaze over the loaf! Ta-dah!!!
Slice a strawberry into four slices, and place in a diamond shape, with a little grape in the middle! Art! J
